The hand written note something real that people crave. And furthermore something not as easily intercepted, manipulated and analyzed by all the rogue agents living online.
And then, once you have that fad and good spam filters presorting your mail, so bots can read your mail anyway, it’s natural to put other nice things into snail mail. Not bills or speeding tickets, those stay online. But people really like getting checks in the mail.
